Coconut oil is one of my favorite oils to eat!! I use it to cook. I add it to my smoothies. It’s a wonderfully delicious and healthy oil! But… Many people still don’t know about the wonderful benefits of coconut oil. They still think that because coconut oil is a saturated fat it will increase high cholesterol, obesity, and heart disease. Nothing could be further from the truth!! The generations of islanders, for whom coconut and coconut oil, is a food staple, enjoy:
- Youthful, soft, wrinkle free skin (despite year round sun exposure)
- Diabetes, cancer and heart disease is virtually unheard of in these populations
- Good health
Thankfully, science and modern medicine is catching up to what the native peoples have known for generations. Coconut oil has been shown to provide protection from viruses and bacteria, infection, cancer, thyroid, heart and brain problems. Coconut also beautifies your skin and burns fat! Even more reason to start adding it to one’s diet! Coconuts are a superfood, which means that they are a nutrient dense food with healing properties.

Some health benefits:
- Improve digestion and the absorption of fat soluble vitamins
- Support the immune system by being an anti-viral, anti-microbial and anti-fungal
- Increase thyroid function
- Increases metabolism and helps burn fat
- Support cardiovascular health
- Nutritional precursor to the anti-aging hormone compound known as pregnenolone
- Contain powerful antioxidants
Look for coconut butter/oil in dark glass bottles and cold-pressed. If you’re going for coconut water, look for ones that have no added sugars and are organic. When buying young Thai coconuts seek out the freshest ones and make sure they are not moldy. Coconut cream can be used to make mouth-watering (and healthy!!) desserts!
Coconut oil is the one oil I always cook with. When I am making Asian-style dishes I will sometimes combine it with a little sesame oil. I always put 1-2 tablespoons of coconut oil in my smoothies. It truly is a tasty oil!
Other uses for coconut oil: skin moisturizer, hair mask, erotic oil and oil pulling.
A delicious recipe to try!
Organic Chicken Stir-fry over Rice Noodles
1 lb Chicken thighs, diced, organic
1 ½ cups chopped broccoli, organic
1 ½ cups chopped cauliflower, organic
1 bunch chopped scallions, organic
2 inch piece of ginger, sliced, organic
1 cup purified water
¼ cup chopped almonds, organic
1 packet rice noodles
2 tbsp coconut oil, organic
1 tbsp sesame oil
2 tbsp tamari (gluten-free soy sauce)
1 tsp Chinese five spice powder
Heat the oil over medium heat with ginger slices for a few minutes. Add the scallions and cook for 2-3 minutes with a splash of Tamari. Add the diced chicken thighs with the rest of the tamari and Chinese five spice powder and cook for 5 minutes. Add the chopped broccoli and cauliflower with the 1 cup of purified water. Cover the pot and cook for 7 minutes, or until the broccoli is bright green. While the vegetables and chicken are cooking – in a separate pot – boil water sufficient to cook the rice noodles – cook as per the instructions on the box. Once the noodles are cooked, place in a colander and rinse with cool water. Then add the noodles to the stir-fry, stirring everything together. Serve with chopped almonds sprinkled on top of the dish.
